Healthy Pumpkin Pie Spice Muffin. Easy Plant Based Breakfast Recipe.
6 large servings, 45 minutes
1 ½ cup all purpose flour (GF)
1 cup pumpkin puree
½ cup maple syrup
½ cup almond milk
⅓ cup extra virgin olive oil
1 tbsp pumpkin pie spice
1 tsp baking soda
1 tbsp cinnamon
¼ tsp apple cider vinegar
2 tbsp chia seeds
½ cup pumpkin seeds
½ cup sunflower seeds
Maple butter (optional)
How To Make
Preheat the oven to 325.
Grease a muffin baking tin with coconut oil.
In a small bowl add 2 tbsp of chia seeds with 5 tbsp of water, whisk and let it sit for about 5 minutes.
In a large bowl add in all the ingredients.
Mix well until forms a dough like consistency
Then add the mixture to muffin tin, filling ¾ of the way.
Bake for 45 minute.
Remove from the oven and let it cool for a bit
Add a layer of maple butter to the top of the muffins if you like.
Eat well. Feel good. Be Happy.
