Healthy Pumpkin Pie Spice Muffin. Easy Plant Based Breakfast Recipe.

6 large servings, 45 minutes


  1. 1 ½ cup all purpose flour (GF)

  2. 1 cup pumpkin puree

  3. ½ cup maple syrup

  4. ½ cup almond milk

  5. ⅓ cup extra virgin olive oil

  6. 1 tbsp pumpkin pie spice

  7. 1 tsp baking soda

  8. 1 tbsp cinnamon

  9. ¼ tsp apple cider vinegar

  10. 2 tbsp chia seeds

  11. ½ cup pumpkin seeds

  12. ½ cup sunflower seeds

  13. Maple butter (optional)

How To Make

  1. Preheat the oven to 325.

  2. Grease a muffin baking tin with coconut oil.

  3. In a small bowl add 2 tbsp of chia seeds with 5 tbsp of water, whisk and let it sit for about 5 minutes.

  4. In a large bowl add in all the ingredients.

  5. Mix well until forms a dough like consistency

  6. Then add the mixture to muffin tin, filling ¾ of the way.

  7. Bake for 45 minute.

  8. Remove from the oven and let it cool for a bit

  9. Add a layer of maple butter to the top of the muffins if you like.

  10. Enjoy 🙂
