Healthy Vegan Chili Easy Recipe
2 servings, ready in 45 minutes,
1 can dark kidney beans
2 tbsp chili powder
1 large can whole peeled organic tomatoes
1 tbsp extra virgin olive oil (EVOO)
Please feel free to add in a pinch salt.
How to Make
Wash, peel and chop the zucchini
Add in a large sauce pan, 1 tbsp of EVOO and zucchini. Let them cook on low to medium heat for about 5 minutes. Or until tender
Then add in the chili powder and any other spices you make like. Mix around.
Add in the whole can of tomatoes and mash the plum tomatoes with a fork, into small pieces.
Add in some black pepper
Cover and cook on low to medium heat for about 45 mins
Top with cilantro and vegan sour cream
Serve and enjoy
