Healthy Plant-Based Gazpacho Soup Recipe

4 servings, 5 minutes prep time, 2 hours to chill

Plant-Based, Vegan


  1. 4 Ripe Tomatoes

  2. 2 Celery Stalks

  3. 1 Cucumber

  4. ¼ cup Apple Cider Vinegar

  5. ¼ cup Extra Virgin Olive Oil

  6. ¼ cup Salsa

  7. Handful of Cilantro

  8. Red Pepper Seed

How to Make

  1. Prep all the vegetables, chop them up a bit.

  2. Place tomatoes into a blender. Pulse for a few seconds.

  3. Then add in all the ingredients. Then blend for 10 seconds.

  4. Place in the fridge for 2 hours.

  5. About 15 minutes before you will serve the soup, place bowls into freezer to chill them a bit

  6. Garnish with cilantro, plant-based yogurt, cucumbers and avocado

  7. Enjoy 🙂
