Healthy Plant-Based Gazpacho Soup Recipe
4 servings, 5 minutes prep time, 2 hours to chill
4 Ripe Tomatoes
2 Celery Stalks
¼ cup Apple Cider Vinegar
¼ cup Extra Virgin Olive Oil
¼ cup Salsa
Handful of Cilantro
Red Pepper Seed
How to Make
Prep all the vegetables, chop them up a bit.
Place tomatoes into a blender. Pulse for a few seconds.
Then add in all the ingredients. Then blend for 10 seconds.
Place in the fridge for 2 hours.
About 15 minutes before you will serve the soup, place bowls into freezer to chill them a bit
Garnish with cilantro, plant-based yogurt, cucumbers and avocado
