Healthy Plant-Based Vegan Black Bean Burrito Recipe

Ingredients

  1. 2 cups Organic Spinach

  2. 1 large Avocado

  3. 1 can Black Beans

  4. 2 Corn Stalks

  5. 1 cup Cherry Tomatoes

  6. 1 Bell Pepper

  7. 1 Cucumber

  8. 1 small Jalapeno

  9. 4 Tortillas

  10. 1 tbsp Extra Virgin Olive Oil

  11. (Optional Cilantro and Salsa)

How to Make

  1. Remove corn from the husk. Place in the microwave for 5 mins

  2. Add olive oil to the pot and heat on low.

  3. Rinse of black beans in a strainer under running water.

  4. Then add black beans, tomatoes, bell peppers, and jalapeno.

  5. Stir, then cover and cook on medium heat for 5 minutes.

  6. Remove corn from the microwave and cut the kernels off the cob.

  7. Add the corn to the pot. Stir and heat for 1 minute.

  8. Add a tortilla to a plate, in the middle of tortilla add the black beans mixture, avocado and cucumbers. Be sure not to over stuff, otherwise the roll will not go so well.

  9. Roll the tortilla over once, the fold each corner into the center of the burrito and roll one more time

  10. You can garnish the burrito with salsa and cilantro if you like

  11. Enjoy 🙂

Notes

You can serve hot or cold. Store left overs in airtight container for up two days.
