Carrot Ginger Plant-Based Vegan Soup Recipe

INGREDIENTS
6 Carrot Stalks
2 cups Vegetable Broth
1 cup water
1 small piece Ginger Root (or 1tbsp ginger powder)
1 small piece Turmeric Root (or 1tbsp turmeric powder)
Black Pepper
1 tbsp Extra Virgin Olive Oil
HOW TO MAKE
1. Slice carrots into small slices and peel the ginger and turmeric root.
2. Add 1 tbsp of extra virgin olive oil to a pot, heat on low for a few minutes then add in the sliced carrot. Cover and cook for 8 minutes on medium heat
3. Then add to a blender, carrots, vegetable broth,water, ginger, turmeric and black pepper.
4. Blend for a few minutes
5.Then add back to the pot, heat for 5 minutes on medium heat.
6. Remove from the stove. Let cool for a bit and then serve.
7. Enjoy.
