Blueberry Banana Plant-Based Vegan Diet Breakfast Muffin Recipe

  1. 2 to 3 ripe Bananas

  2. ½ cup Blueberries

  3. 1 cup Extra Virgin Olive oil or Organic Coconut oil

  4. 2 cups Organic All-Purpose flour

  5. 1 tsp Baking Soda

  6. 2 tsp Baking Powder

  7. ¼ cup Coconut sugar

  8. 1 cup Malibu Flax Mylk or any Plant-Based Milk

  9. 1 tsp maple syrup

  10. 1 tsp vanilla extract

  11. 1 tsp Cinnamon

How to Make

  1. Preheat oven 350.

  2. Peel and Mash the bananas.

  3. In a separate large bowl mix flour,coconut sugar, baking soda, baking powder, cinnamon.

  4. In a separate bowl add in bananas, oil, flax milk, maple syrup, vanilla extract. Whisk well.

  5. Then add the banana mix to the flour mix. Mix together well.

  6. Add in Blueberry or any other extras you would like. Mix well.

  7. Grease muffin tin. Then add the mixture to the muffin tin filling them ¾ way.

  8. Bake in the oven for about 35 mins or until golden brown.

  9. Once ready, take out and let them cool before enjoying them.
