Baked Vegan Mini Donuts

Easy Baked Plant- Based Vegan Mini Donuts Recipe.

10-12 mini donuts

Ingredients

  1. 1 ¾ cups All-purpose flour

  2. 1 tsp Baking soda

  3. ¼ cup Coconut Sugar

  4. ⅓ cup Melted Coconut oil

  5. 2 tsp Vanilla extract

  6. 1 cup Unsweetened Coconut milk (or any other plant-based milk)

  7. 1 Tbsp Apple Cider Vinegar

Icing Ingredients

For chocolate icing you will need

¼ cup Hu Gems chocolate bits or any other chocolate chips.

For white icing you will need

¼ cup coconut butter and

How To Make

  1. Plugin Babycakes mini donut maker. Or if you are using a mini donut pan, preheat Oven to 350 degrees and grease the pan with coconut oil.

  2. In a medium-size bowl mix all-purpose flour, coconut sugar and baking soda together well.

  3. Then add to the mixture the coconut milk, coconut oil, apple cider vinegar, and vanilla extract.

  4. Mix all together with a spoon or whisk to an even consistency.

  5. Then add the mixture to Babycakes and bake for 2 mins. This recipe will make 10-12 mini donuts. (If you are using a mini donut pan, bake for 4 mins.)

  6. Remove mini donuts and let cool before adding the icing.

  7. In the meantime, melt the Hu chocolate gems on the stovetop for about 2 min or until it melts slightly. Remove from the heat and stir with a fork.

  8. In a separate bowl mix together the coconut butter, and melted coconut oil, with a fork.

  9. Once the mini donuts are cooled off, you can add the icing to each donut
