Coconut Lemon Plant-Based Vegan Snacks

Easy Coconut Lemon Plant-Based Energy Balls Snack


6-7 servings, 5 minutes

Plant-Based, Vegan

Ingredients

  1. ¾ cup Unsweetened Shredded Coconut

  2. ⅓ cup Coconut Butter

  3. 1 ½ tbsp Lemon Juice

  4. 1 ⅛ tbsp Maple Syrup

  5. 1 tsp Lemon Zest

  6. ⅔ tsp Vanilla Extract

How To Make

  1. In a blender place all the ingredients. Blend together well,

  2. Then transfer mixture to a bowl.

  3. Sprinkle unsweetened coconut flakes onto a plate.

  4. Scoop out 1 tablespoon of the mixture at a time and roll into a bite size ball. Complete until you use up all the mixture.

  5. Roll the coconut balls into the coconut flakes, covering the entire ball.

  6. Transfer to an airtight container, place in the fridge.

  7. Enjoy 🙂

Notes

Refrigerate in an airtight container for up to five days or freeze for up to two months.
